Zucchini

Troy and I stopped at a little Farmers Market on Saturday and came home with some goodies. We got two huge zucchini for a dollar, so I found a recipe that would put them to good use. If you're looking for something new to do with your garden squash or just like zucchini in general, I highly recommend this soup. We think it's delicious. All you need are these things:

2 T. olive oil
1/2 c. chopped onion
4 c. chopped zucchini
2 garlic cloves, minced
1 normal sized can of petite diced tomatoes
1 packet Lipton's Savory Herb with Garlic soup mix
2 c. chicken broth
1 c. frozen peas
1/2 c. medium shell pasta (I used Barilla Whole Grain)
*Saute the onions in olive oil, until softened.
*Add the zucchini and saute for a few minutes.
*Add in the garlic and saute for a minute, until fragrant.
*Stir in the can of tomatoes and packet of soup mix until well blended.
*Bring to a boil and add the chicken broth. Once that starts to boil, lower heat to medium-low and simmer, covered, for 15 minutes.
*Add the peas and pasta and simmer for another 10 minutes.
*Top with parmesan cheese and serve with bakery bread for dipping.

Super quick and super easy.

Sounds YUMMY!! I am always looking for new recipes and my parents just gave us some zucchini last night, so this will be perfect to try. Especially if this cold weather keeps up! Thanks for sharing Amy! :)

I totally remember that guy! Crazy Fred. That's what someone kept calling him- to his face! And he didn't seem to mind. He even told us his husband was back in his room. That was so funny. What a werido. He had to have been under the influence of some drug.

Sounds good and I know I would like it but Jeff would never touch it haha. Veggies...not his thing :)
